Kevn Minnick: Executive Chef/Owner
I was raised outside Dayton Ohio where I lived for 15 years and moved to Quincy in 1997 after I completed high school. I received a BFA in Studio Art with a concentration in ceramics from Oklahoma State University in 2003. I was married to the love of my life Hilary and our amazing son Judson Bond was born June 24th of 2008. I first started working in restaurants at the age of 16. From then I have had many job duties from bussing tables to dishwashing to serving and bartending. I first started cooking “professionally” in 2006 under Michael Mitchell at the Busy Bistro. After a couple years I accepted a position as the Executive Chef at Tony’s Too in the new Holiday Inn. Finally in July of 2011 I opened my first restaurant The Maine Course located at 626 Maine St.
Derek Smith: Lead Server
Was also born and raised in Quincy. At the age of 16 Derek began working in many of Quincy’s local restaurants such as the Pier, Tony’s, Lakeview and QCC. Chef Kevn and Derek began working together at the Busy Bistro and have work along side each other for about 10 years now. Derek and his wife Amanda have twin girls Madylin and Keara and a son Carder who joined the family September of 2012.
